Sweet Potato Wedges // 20 Minute Recipe

I'm always trying my best to eat foods which are good for me, and I decided I'd try to make something new and exciting (for me at least). I found a sweet potato lurking in our veg basket which luckily hadn't grown any legs yet, and decided to try sweet-potato wedges!

What You'll Need //
One sweet potato - this made enough for 2 people.
Olive Oil
Salt & Pepper
Thyme
Bay Leaf
Crushed (dried) Chillies

What To Do //
Preheat your oven to 200 Degrees, then chop your sweet potato in wedges (mine were just like chunks really), leaving the skin on. Get a baking tray and put the chunks/wedges in there. Drizzle them in olive oil and sprinkle with the thyme, crushed chillies, and salt & pepper. Toss them around a bit to ensure they're all covered, then place a bay leaf somewhere on the tray so that the flavours are absorbed while they're cooking. Stick them in the oven for around 20 minutes and voila! There you have sweet potato wedges!


I ate mine with salad, cheese and some chargrilled chicken slices. It was delicious, and only took around half an hour in total! If you make these be sure to let me know or send me a picture on Twitter - @katygilroyblog
